Vegan Cauliflower Gratin Recipe

I like this roasted garlic cauliflower for its ease of preparation and for its versatility in complementing a wide range of main courses. The subtle yet distinct garlic flavor adds an extra layer of depth to the dish while a sprinkling of Panko breadcrumbs adds a satisfying crunch.

As a lighter alternative to traditionally heavier side dishes, this cauliflower gratin allows for guilt-free indulgence without compromising on taste or satisfaction. Your low-carb guests will thank you for this tasty addition to the holiday table!

Garlic Cauliflower Gratin

You will need the following:

  • Non-stick cooking spray
  • 2 tablespoons + 2 teaspoons garlic, minced
  • 2 tablespoons vegan butter, melted
  • 1 tablespoon olive oil
  • 1/3 cup vegan Parmesan cheese, grated
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 6 cups cauliflower florets
  • 1 cup Panko breadcrumbs
  • 1 tablespoon Italian parsley, chopped

How to Make Garlic Cauliflower Gratin

STEP ONE: Preheat oven to 400°F and spray an 8×8-inch casserole dish with non-stick cooking spray

STEP TWO: In a large bowl, combine the garlic, butter, olive oil, Parmesan cheese, salt, and pepper. Adjust seasoning to taste then add the cauliflower and toss to coat.

STEP THREE: Transfer to the casserole dish, cover, and bake for 25 minutes, until the cauliflower is fork-tender.

STEP FOUR: Uncover and sprinkle with Panko breadcrumbs. Return to the oven then switch oven setting to Broil for 3-5 minutes, until the cauliflower is golden brown on top.

STEP FIVE: Sprinkle with parsley and serve warm.
