Easy Vegan Royal Icing

This simple vegan royal icing recipe yields a thick white icing that is super versatile and can be customized to suit your holiday decorating needs.

Easy Vegan Royal Icing - Hardens as it dries; great for gingerbread house construction & perfectly formed "icicles" to piping borders & details on cookies.

The icing hardens as it dries making it an excellent choice for gingerbread house construction and perfectly formed “icicles” hanging off the roof to piping borders and intricate details onto cookies.

For best results, royal icing should be stored in an airtight container at room temperature and used within 12 hours.

The icing dries pretty quickly so using it while freshly made is best.

Small batches as needed are also the way to go.

This recipe yields approximately 1/2 cup.

Pro tip: Place a wet cloth over the bowl while you’re working with the icing to keep it from beginning to harden.

Ingredients for Easy Vegan Royal Icing:

  • confectioners’ sugar
  • water
  • light corn syrup
  • almond extract

How to make Easy Vegan Royal Icing:

Into a medium-size mixing bowl, stir together confectioners’ sugar and water.

Add light corn syrup and almond extract.

Continue mixing until all ingredients are incorporated. Icing will be thick.

If using food coloring, add a few drops at a time, mixing well after each addition until the desired color is achieved.

How can I adjust the consistency of the icing?

If you find your project requires a thicker or thinner icing, the consistency can be easily adjusted. To increase the thickness, simply add more confectioners’ sugar. For a thinner icing in which to dip cookies for decorating, add more water a teaspoon at a time until the desired consistency is reached.

What if I need a different color icing?

No problem! Stir in a few drops of food coloring and you’re all set.

Can I substitute a different flavor extract?

Absolutely! Customize the flavor to your taste preference by swapping the almond extract for lemon, orange, peppermint, or whatever else you like.
