Easy Cauliflower Steak Recipe

I like this recipe because it only takes a head of cauliflower and a handful of pantry staples to create a satisfying vegetarian main dish. First, we slice the cauliflower into thick steaks, then give them a generous drizzle of olive oil and a sprinkle of salt, pepper, and spices.

Once the seasoning is evenly distributed, pop the steaks into a preheated oven and roast until they’re fork tender and golden brown, with a careful flip halfway through to ensure even cooking. 

Oven-roasted cauliflower steaks are a no-fuss dish that feels fancy while keeping prep and cooking time quick and easy!

Ingredients for Roasted Cauliflower Steaks

You will need the following: 

  • 1 medium head of cauliflower, 1-2 pounds
  • 1 teaspoon garlic powder
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon olive oil

Choosing the Right Cauliflower

  • For best results, opt for a small to medium head of cauliflower. While a large head of cauliflower might be tempting, especially when they’re priced per head, keep in mind that larger ones tend to fall apart more easily. A smaller cauliflower head typically holds its shape better, giving you that gorgeous fan-like presentation.

How to Cut Cauliflower into Perfect Steaks

  • Start with a whole head of cauliflower, and first, remove any leaves and trim the bottom stem just enough set the cauliflower upright on your cutting board.
  • Using a sharp knife, position the head with the core facing down and carefully cut it into 1-inch thick slices. Each slice should include a portion of the core to help keep the “steak” intact, which is especially important for smaller heads that hold together better.

How to Make Cauliflower Steaks

STEP ONE: Prep. Preheat the oven to 425°F. Lightly oil or line a large baking sheet with parchment paper.

STEP TWO: Slice the Cauliflower. Trim away the tough outer leaves and a bit of the stem so the cauliflower sits steadily on your cutting board. Carefully slice the head from top to bottom into 1-inch thick steaks, making sure each slice retains a bit of the core for stability. 

STEP THREE: Make the Seasoning Mix. In a small bowl, combine garlic powder, ground coriander, paprika, salt, and black pepper. 

STEP FOUR: Prep the Steaks. Drizzle olive oil on both sides of each cauliflower steak and sprinkle both sides with the seasoning mix.

STEP FIVE: Roast. Place the seasoned steaks onto the prepared baking sheet and roast in the preheated oven for 15-20 minutes, turning them halfway through. The steaks are done when they are fork tender.

STEP SIX: Serve. Remove from the oven and serve hot. Enjoy your quick, easy, and delicious cauliflower steaks!

  • Cauliflower steaks naturally pair with a range of classic sides, such as Twice Baked Potatoes and Green Bean Salad. Many of the same accompaniments typically served with meat-based steaks also work perfectly with this plant-based meal.

  • What if my cauliflower steaks fall apart while slicing? If your steaks break apart, don’t worry—this recipe works just as well with cauliflower florets.
  • Can I make cauliflower steaks in an air fryer? Yes. Preheat to 400°F, lightly oil the basket, and air fry the steaks for about 15 minutes.
  • Can I prepare this recipe ahead of time? Yes, partially. The cauliflower can be sliced and seasoned, then stored in the refrigerator until ready to roast.

Allow them to cool completely before sealing to help maintain their texture, and reheat in the oven at 350°F for about 10 minutes to bring back some of the crispy edges.

      Thanks! I usually serve them with sides of mashed potatoes and green beans or peas. Gravy over the top can be a nice addition, too.
