Preheat the oven to 425°F. Lightly oil or line a large baking sheet with parchment paper.
Trim away the tough outer leaves and a bit of the stem so the cauliflower sits steadily on your cutting board. Carefully slice the head from top to bottom into 1-inch thick steaks, making sure each slice retains a bit of the core for stability.
In a small bowl, combine garlic powder, ground coriander, paprika, salt, and black pepper.
Drizzle olive oil on both sides of each cauliflower steak and sprinkle both sides with the seasoning mix.
Place the seasoned steaks onto the prepared baking sheet and roast in the preheated oven for 15-20 minutes, turning them halfway through. The steaks are done when they are fork tender.
Remove from the oven and serve hot.
