Ingredients

  • 1 medium head of cauliflower 1-2 pounds
  • 1 teaspoon garlic powder
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon olive oil

Instructions

  • Preheat the oven to 425°F. Lightly oil or line a large baking sheet with parchment paper.
  • Trim away the tough outer leaves and a bit of the stem so the cauliflower sits steadily on your cutting board. Carefully slice the head from top to bottom into 1-inch thick steaks, making sure each slice retains a bit of the core for stability.
  • In a small bowl, combine garlic powder, ground coriander, paprika, salt, and black pepper.
  • Drizzle olive oil on both sides of each cauliflower steak and sprinkle both sides with the seasoning mix.
  • Place the seasoned steaks onto the prepared baking sheet and roast in the preheated oven for 15-20 minutes, turning them halfway through. The steaks are done when they are fork tender.
  • Remove from the oven and serve hot.
