Easy Potato Side Dish 

I like these cheesy potatoes because they’re a comforting side dish that’s big on flavor yet ridiculously easy to make.

A quick chop of the potatoes, a toss in butter and ranch seasoning, and into the oven they go. A layer of melty cheese over the potatoes adds a gooey finish, and a sprinkle of parsley adds a pretty pop of color before serving.

Ingredients for Cheesy Ranch Potatoes

Here’s what you’ll need to make this recipe. Exact amounts are listed on the printable recipe card at the bottom of the post.

  • Baby Red Potatoes – Creamy texture and thin skins make baby reds ideal here. No peeling required, and they hold their shape while baking.
  • Butter – Adds rich flavor that helps the ranch seasoning stick. .Olive oil can also be used for this recipe. 
  • Ranch Seasoning Mix – You’ll need about half a packet of dry ranch seasoning mix. If you have homemade ranch seasoning mix ready to go, even better. This pantry shortcut brings all the herbs and tang all in one step. 
  • Shredded Cheese – Sharp cheddar gives the best flavor, but you can swap in mild cheddar, Colby Jack, or Mexican cheese blend also pair well with the ranch mix.
  • Parsley – A sprinkling of fresh parsley adds a pop of color and freshness before serving

How to Make Cheesy Ranch Potatoes

STEP ONE: Preheat the Oven. Set the oven to 400°F. Lightly grease a 9×13-inch casserole dish with butter or cooking spray.

STEP TWO: Season the Potatoes. Place cut potatoes in a large mixing bowl. Drizzle with melted butter, sprinkle with ranch seasoning, and toss potatoes until evenly coated.

STEP THREE: Bake. Arrange the potatoes in a single layer in the prepared dish. Bake uncovered for 40 minutes, stirring once halfway through, until fork-tender.

STEP FOUR: Add the Cheese. Remove dish from the oven and sprinkle cheddar evenly over the hot cooked potatoes. Return to the oven for 5 minutes, just until the cheese melts.

STEP FIVE: Serve. Top with parsley and serve warm.

Make It Vegan 🌱

For a plant-based dish, use dairy-free butter, cheese, and vegan ranch seasoning (Hidden Valley ranch seasoning contains powdered buttermilk.) 

Holiday Prep for Success

If you’re planning ahead for holiday gatherings, it might be tempting to get these potatoes out of the way early, but baking them too far in advance doesn’t work well, no matter how carefully you reheat. 

For the best results, prep your ingredients in advance. Wash and cut the potatoes, shred the cheese, and mix the ranch seasoning with the butter, then assemble and bake right before serving.

You’ll save yourself time without sacrificing the flavor and texture that make this side dish worth putting on the holiday table.

Storage and Reheating

Cheesy Ranch Potatoes are best served hot right out of the oven, but if you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven until heated through, about 15-20 minutes. A quick microwave reheat works too for smaller portions.

  • Freezing: Not recommended. The potatoes lose their texture after thawing.
