Ingredients

  • 3 pounds baby red potatoes rinsed and halved or quartered into 1-inch pieces
  • 3 tablespoons butter melted
  • 2 tablespoons dry ranch seasoning mix
  • 1 ½ cups sharp cheddar cheese shredded
  • 1 tablespoon parsley chopped

Instructions

  • Set the oven to 400°F. Lightly grease a 9x13-inch casserole dish with butter or cooking spray.
  • Place cut potatoes in a large mixing bowl. Drizzle with melted butter, sprinkle with ranch seasoning, and toss potatoes until evenly coated.
  • Arrange the potatoes in a single layer in the prepared dish. Bake uncovered for 40 minutes, stirring once halfway through, until fork-tender.
  • Remove dish from the oven and sprinkle cheddar evenly over the hot cooked potatoes. Return to the oven for 5 minutes, just until the cheese melts.
  • Top with parsley and serve warm.
