Ingredients for Vegan Cabbage and Sausage

  • 4 links vegan sausage, sliced into 1/2-inch rounds
  • 1 tablespoon vegan butter
  • 1/4 cup yellow onion, diced
  • 1 tablespoon garlic, minced
  • 4 cups green cabbage, rough chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper

Ingredient Notes

  • Sausage: The variety of meat-free sausage used will greatly influence the flavor of this dish. I enjoy the spicy kick of seasonings in Beyond Meat’s Hot Italian sausage so that is my go-to choice for this recipe. For a milder dish, try plant-based bratwurst. Breakfast-style sausage is not recommended for this recipe.
  • Cabbage: For the prettiest presentation, stick with green cabbage. While red and green cabbages can generally be used interchangeably, cooking red cabbage tends to result in the loss of some of its vibrant color.

How to Make Vegan Sausage and Cabbage

STEP ONE: Set a large skillet over medium-high heat. When hot, add the sliced sausages in an even layer. Cook for 4 minutes, until browned on each side, turning the sausage slices halfway during the cooking time. Remove the sausages from the skillet and set them aside. Do not wipe out the skillet.

STEP TWO: Into the skillet, add the butter. When the butter is melted, add the onion. Cook for 2 minutes, until softened.

STEP THREE: Add the garlic and continue cooking for an additional 30 seconds.

STEP FOUR: Add cabbage, salt, and pepper.

STEP FIVE: Reduce heat to medium then cover and cook for 3 minutes, until cabbage is wilted.

STEP SIX: Stir in the cooked sausage. Adjust seasoning to taste and serve hot.

    Is the nutritional information based on how many cups per serving?

      Hi Nancy ~ I use a program that calculates the information based on the total number of servings indicated on the recipe card, not necessarily in cups.

    This came together quickly! I sauteed my cabbage for about ten minutes, then stirred in a squirt of stone ground mustard before adding the vegan sausage back to the pan. Very tasty!
