Vegan Almond Flour Cookies

I like these cookies for their nutty flavor and the way they pair exceptionally well with coffee or hot tea during the holiday season.

The simple ingredients list and quick preparation make these some of the easiest cookies ever! All you do is combine the wet ingredients with the dry ingredients, roll the dough into balls, press an almond into the top, and bake. They’re so easy that you might even want to make a double batch for gifting or to freeze for later.

Chinese New Year Almond Cookies

These simple cookies are especially popular for Lunar New Year celebrations. It is a traditional cookie often shared with friends and family as a symbol of good luck and prosperity in the coming year, with the round shape representing coins and the almond representing luck, similar to the way Black-Eyes Peas and Greens are eaten for health and wealth by those of us with Southern traditions in the U.S.

Ingredients for Vegan Almond Cookies

You will need the following: 

  • 1 cup almond flour
  • 2 teaspoons baking powder
  • 2/3 cup creamy almond butter 
  • 1/4 cup maple syrup
  • 2 tablespoons almond milk
  • 1 teaspoon almond extract
  • 18 whole raw almonds, optional for garnish

Ingredient Notes

  • To preserve the almond flavor of the cookies, ingredient swaps are not recommended. Sure, you could use all-purpose flour, or coconut flour, or vanilla extract, etc. but then you would no longer be making almond cookies. For best results (almond cookies that actually taste like almond), stick to the list, friends.

How to Make Vegan Almond Cookies

STEP ONE: Preheat the oven to 325°F. Line a baking sheet with parchment paper.

STEP TWO: In a medium bowl, combine the almond flour and baking powder. Stir in the almond butter, maple syrup, almond milk, and almond extract. 

STEP THREE: Roll the cookie dough into 18 balls. Arrange on the prepared baking sheet and gently press each dough ball to flatten slightly to 1/2-inch thick.

STEP FOUR: Lightly press 1 almond, if using, into the center of each cookie.

STEP FIVE: Bake for 12 minutes, until the cookies are golden brown. Cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.

Storage

Store these almond cookies in an airtight container at room temperature.
