Baked Celery Casserole
I like this recipe I generally tend to use celery in more of a supporting role, such as to add crunch or color to a dish, than as a main ingredient. However, for this casserole, baked celery is truly the star of the dish.
The creamy sauce, made with non-dairy butter, heavy cream, and Parmesan cheese, helps to balance out the subtle sweetness of the celery, creating a dish that’s both rich and comforting. And because the celery has been baked, it adds a unique flavor and texture to the dish that makes it stand out.
Ingredients for Celery Gratin
You will need:
- 3 tablespoons vegan butter, divided
- 2 tablespoons all-purpose flour
- 3/4 cup vegan heavy cream
- 3/4 cup + 1 tablespoon vegan Parmesan cheese, grated and divided
- 3/4 pound celery, cut diagonally into 1-inch pieces
- 1/4 teaspoon ground black pepper
- 1/2 cup Panko breadcrumbs
- 1 tablespoon parsley, chopped
How to Make Celery Gratin
STEP ONE: Heat a medium saucepan over medium heat, then add the butter. When the butter is melted, add the flour and whisk until smooth.
STEP TWO: Remove from heat and whisk in the heavy cream, 3/4 cup Parmesan cheese, and ground black pepper.
STEP THREE: Adjust seasoning to taste then add the celery and gently stir to coat thoroughly. Transfer to a greased 1-quart baking dish.
STEP FOUR: Cover and bake for 20 minutes. While the celery is baking, use a microwave to melt the remaining 1 tablespoon of butter in a small bowl. Add the breadcrumbs, remaining 1 tablespoon Parmesan, and parsley; stir to combine.
STEP FIVE: Remove cover and sprinkle with breadcrumb mixture. Return to the oven and continue baking, uncovered for 10 minutes, until golden and bubbly. Serve hot.
