Vegan Praline Recipe

I Iike this recipe because these vegan pralines have all the texture and flavor of traditional pralines – rich and creamy and nutty – without the dairy.

Pralines are celebrated as a beloved candy indulgence, particularly in the Southern United States where their rich history and irresistible flavor have made them a culinary icon. The sweet blend of caramelized sugars, creamy texture, and crunchy pecans, captures the essence of New Orleans in every bite.

Vegan Pecan Pralines ~ These sweet and chewy, pecan-studded confections are easy to make with simple ingredients.

Ingredients for Vegan Pecan Pralines

You will need the following: 

  • 3/4 cup light brown sugar
  • 3/4 cup white sugar
  • 1/2 cup vegan sour cream
  • 1 tablespoon light corn syrup
  • 1/4 teaspoon baking soda
  • 1 tablespoon vegan butter
  • 1/2 teaspoon vanilla bean paste
  • 1 cup pecan halves

Ingredient Notes

  • Light Brown Sugar – For a rich, caramel-like flavor. Dark brown sugar can be used, although it will result in a slightly deeper caramel flavor and darker color to the pralines.
  • Granulated Sugar – White sugar is used to balance the natural sweetness of the brown sugar.
  • Vegan Sour Cream – For a creamy consistency. I use Tofutti brand vegan sour cream.
  • Light Corn Syrup – Helps prevent crystallization in the candy mixture, resulting in a smooth and glossy finish. 
  • Baking Soda  – Gives the pralines their signature chewy texture.
  • Vegan Butter – Adds richness and traditional buttery flavor to the pralines.
  • Vanilla Bean Paste – An equal amount of vanilla extract can be substituted if needed.
  • Pecan Halves – The rich, buttery taste of pecans complements the sweet caramelized sugars perfectly. Traditionally, praline pecans are halves, but they can also be chopped or even crushed depending on personal preference or the desired presentation of the pralines.

How to make Vegan Pecan Pralines

Prepare the Pan – Line a cookie sheet with parchment paper, wax paper, or a silicone mat. 

Prepare the Mixture – In a medium non-stick pot over medium heat, combine the light brown sugar, white sugar, vegan sour cream, light corn syrup, and baking soda. Stir frequently until the sugars are dissolved and the mixture is well combined.

Bring to a Boil – Increase the heat to medium-high and bring the sugar mixture to a boil. Without stirring, continue cooking until a candy thermometer reads 240 degrees F (soft ball stage), ensuring a perfect consistency for your pralines.

Incorporate Flavors – Remove from heat and use a wooden spoon or spatula to stir in the vegan butter, vanilla bean paste, and pecan halves. 

Drop and Cool – Onto the prepared baking sheet, drop spoonfuls of the praline mixture, spaced about 2 inches apart. Allow the pralines to cool completely, until they are firm. Serve at room temperature.

Optional Variation: Sprinkle a little bit of sea salt over the tops of the pralines as they cool.

  • Store in an airtight container at room temperature.

    I remember the very first time I went to New Orleans and I happened to be lucky enough to be there during the very early parades. And, of course, I was also lucky to get to try authentic pralines. So good. Your vegan version looks delish!
