Traditional Vegan Peanut Brittle
This classic holiday candy is quick and easy to make and does not require refrigeration, making it perfect for gifting.
There is just something about the rich and buttery, salty and sweet flavor combination of old-fashioned peanut brittle that says Christmas to me.
I have been using this same recipe every Christmas season for years.
This peanut brittle is a definite family favorite!
Ingredients for Traditional Vegan Peanut Brittle:
- granulated sugar
- light corn syrup
- sea salt
- water
- lightly salted peanuts
- vegan butter
- baking soda
How to make Traditional Vegan Peanut Brittle:
Preheat oven to 170 degrees F.
Cover a large cookie sheet with parchment paper. Set cookie sheet in oven to keep warm. (This will make spreading the candy easier!)
Into a large saucepan over medium heat, add sugar, corn syrup, salt, and water. Stir continuously for 3 minutes, or until sugar is dissolved.
Add peanuts and continue stirring until temperature on a candy thermometer reaches 300 degrees F.
Remove from heat and quickly stir in butter and baking soda then immediately pour entire mixture onto cookie sheet. Use a buttered spatula to help spread the mixture into an even layer.
Allow to cool completely then gently lift peanut brittle from the cookie sheet and use your hands to snap the candy into pieces.
Store in an airtight container at room temperature.
