Spicy Gravy Recipe

I like this recipe because it’s made with simple ingredients yet delivers big and spicy Cajun flavor. If you like bold flavors that brings the heat, this is a good gravy for you! Try my Brown Gravy or Caramelized Onion Gravy for a rich dark gravy minus the heat. 

Ingredients for Cajun Gravy

You will need the following:

  • 5 tablespoons butter
  • 1 teaspoon liquid smoke
  • 2 tablespoons yellow onion, finely chopped
  • 2 teaspoons garlic, minced
  • 4 tablespoons all-purpose flour
  • 2 1/2 cups beef-style broth, divided
  • 1/8 teaspoon Worcestershire sauce
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon ground black pepper

Ingredient Notes

  • Liquid Smoke – Traditional cajun gravy includes bacon grease. Since we don’t do that here, liquid smoke adds signature smokiness.
  • Beef-Style Broth – I use Better Than Bouillon’s vegan No-Beef Base. Vegetable broth or vegan chicken broth can be substituted; however, the gravy will be lighter in color and flavor. 
  • Worcestershire Sauce – I use vegan Worcestershire sauce. The Wizard brand is excellent.
  • Cajun Seasoning – This blend usually includes a variety of spices such as black pepper, white pepper, cayenne pepper, onion powder, garlic powder, and paprika and gives the gravy its fiery kick. Slap Ya Mama Cajun Seasoning is a good one.

How to Make Cajun Gravy

STEP ONE: Set a medium saucepan over medium heat, then add butter. When the butter is melted, add the liquid smoke. 

STEP TWO: Add the onion and cook for 2 minutes, until softened. Add the garlic and continue cooking for an additional 30 seconds.

STEP THREE: Whisk in the flour (mixture will be thick). Gradually add 2 cups of the vegan beef broth, whisking continuously until smooth.

STEP FOUR: Add the Worcestershire sauce, Cajun seasoning, thyme, oregano, and black pepper. Whisk to incorporate. Reduce the heat to low. 

STEP FIVE: Simmer over low heat for 5 minutes, stirring occasionally, until thickened. Adjust seasoning to taste and serve hot. (For best results, serve immediately. This gravy will thicken as it cools to room temperature. Stir in the reserved broth to thin, as needed.)
