Broccoli Casserole Recipe

I like this cheesy broccoli casserole dish for its balance of flavors and textures. The cooking time is set so that the broccoli is done but still bright green and crisp and there’s just enough dairy-free cheese sauce to coat every bite without overwhelming the dish.

Ingredients for Broccoli Gratin

You will need:

  • Non-stick cooking spray
  • 8 cups small broccoli florets
  • 3 tablespoons vegan butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cup oat milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon ground nutmeg
  • 1 cup vegan cheddar cheese, shredded
  • 1/2 cup Panko bread crumbs
  • 1 tablespoon vegan butter, melted

How to Make Broccoli Gratin

STEP ONE: Preheat the oven to 450°F. Spray an 8×8-inch baking dish with non-stick cooking spray. Arrange broccoli florets in the baking dish and set aside.

STEP TWO: Into a medium saucepan over medium heat, add the 3 tablespoons of butter. When the butter is melted, whisk in the flour until smooth; the mixture will be thick. Whisk in the milk, salt, onion powder, pepper, and nutmeg. Bring just to a boil, whisking continuously, then reduce the heat to low. Add the cheese and continue cooking, stirring frequently until the cheese is melted, about 3 minutes. Pour the cheese mixture evenly over the broccoli.

STEP THREE: In a small bowl, combine the Panko bread crumbs with 1 tablespoon of melted butter. Sprinkle over the cheesy broccoli to cover completely.

STEP FOUR: Bake, covered, for 15 minutes. Remove the cover and continue baking for an additional 5 minutes, until the bread crumbs are lightly toasted. Serve hot.

Love broccoli in pretty much any form. But it works so well in this dish. It’s a fab side dish for a roast dinner, but also good on its own.

Is the oat milk a cup measurement?

Yes! Thank you for catching that! I’ve updated the recipe to reflect 1 1/2 cups.😊
