These dairy-free cake mix cookies are fun and easy to make!

A perfectly soft texture makes them completely irresistible to kids and adults, alike.

I like this recipe because it can be customized with lots of different flavors and the cookies can be decorated for any holiday or occasion.

The two main ingredients you will need are cake mix and pudding mix of whatever flavor combination suits your fancy.

For this recipe, I used Duncan Hines Classic White cake mix and Jell-O Vanilla pudding mix. I also rolled the cookies in colored sanding sugar but festive sprinkles would look great too!

Fun Fact: Most Duncan Hines brand cake mixes are vegan.

So are a handful of Jell-O pudding mixes; specifically, Vanilla, Banana Cream, Pistachio, and Lemon.

There are obviously other vegan options; these just happen to be the brands I prefer for this recipe. You can see though that there are lots of options for mixing and matching flavors.

Ingredients for Cake Mix Cookies

  • 1 (15.25 ounce) package vegan cake mix
  • 1 (3.4 ounce) package vegan pudding mix
  • 2 tablespoons cornstarch
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • sanding sugar, for rolling, optional

Optional Add-Ins

Try stirring in 1 cup of your favorite add-in before chilling the dough!

Here are a few of my favorites:

  • Dairy-free chocolate chips
  • Chopped nuts
  • Shredded coconut
  • Sprinkles

How to Make Cake Mix Cookies

STEP ONE: Preheat the oven to 350°F.

STEP TWO: In a large bowl, whisk together the cake mix, pudding mix, and cornstarch.

STEP THREE: Using a hand mixer or low speed, mix in the vegetable oil and water, just until combined and a dough is formed.

STEP FOUR: Refrigerate dough for at least 2 hours and up to overnight, to chill throughout.

STEP FIVE: Roll the dough into 1-inch balls.

STEP SIX: Roll each ball in sanding sugar, if using, and place at least 2 inches apart on baking sheets

STEP SEVEN: Bake for 10 minutes, until tops are split. Cool for 5 minutes on the baking sheet then transfer to cooling racks to finish cooling completely and serve.

Storage

Store cookies in an airtight container at room temperature.
