Parsley Rice Recipe

I like this easy recipe because the parsley adds a vibrant green color and a refreshing and mildly herbaceous flavor to plain white rice and is a great way to use leftover rice.

To prepare parsley rice, you start by cooking rice according to your preferred method, whether it’s stovetop, rice cooker, or instant pot. Once the rice is cooked, fluff rice with a fork then finely chop a bunch of fresh parsley leaves, discarding the tough stems. The parsley is then mixed into the cooked rice along with melted garlic butter, evenly distributing its flavor and adding a pleasant herbal aroma.

Quick Tip for Success

  • Note that this simple side dish calls for rice that is already cooked and cooled. Giving rice time to cool down before using it in a recipe is important because it allows the rice grains to firm up and separate from each other. Cooling the rice also prevents it from becoming mushy when mixed with other ingredients, resulting in a better texture and overall presentation of this simple recipe.

Ingredients for Parsley Rice

You will need the following:

  • 4 cups long grain white or brown rice, cooked and cooled
  • 1/4 cup vegan butter
  • 1 tablespoon garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup curly parsley, finely chopped

How to Make Parsley Rice

STEP ONE: Set a large deep skillet over medium heat and add the butter. When the butter is melted, add the garlic and cook for 30 seconds.

STEP TWO: Add the cooked rice, salt, and black pepper. Gently stir to coat with the garlic butter and cook, stirring occasionally, for 3 minutes or until heated through.

STEP THREE: Stir in the parsley then adjust the seasoning to taste and serve warm or at from temperature. Store any leftovers in an airtight container in the refrigerator.
