Chocolate Peanut Butter Bars ~

If you like Reese’s peanut butter cups, you are going to love this easy, homemade, no-bake version of the classic candy!

This mixture of vegan butter, crunchy peanut butter, graham cracker crumbs, and powdered sugar topped with a blend of melted chocolate chips and even more crunchy peanut butter is everything you want it to be.

These bars are perfect for the Halloween candy season or anytime you’re craving an easy and sweet chocolatey treat.

Ingredients for Chocolate Peanut Butter Bars:

  • 3/4 cup vegan butter
  • 1 1/4 cups crunchy peanut butter
  • 2 cups graham cracker crumbs
  • 2 cups confectioner’s’ sugar – also known as powdered sugar
  • 1 1/2 cups vegan semi-sweet chocolate chips – I used Trader Joe’s brand

How to Make Chocolate Peanut Butter Bars:

For the Peanut Butter Filling

STEP ONE: In a stand mixer or large mixing bowl, use a medium-low speed setting to mix together the vegan butter and 1 cup peanut butter. Add graham cracker crumbs and confectioners’ sugar. Continue mixing on medium-low until well blended. Into a parchment-lined 8×11-inch pan, press the filling onto the bottom in an even layer.

STEP TWO: Refrigerate for 30 minutes. This helps to keep the warm chocolate topping from seeping into the peanut butter layer. 

For the Chocolate Layer

STEP THREE: Into a medium-size mixing bowl, add the chocolate chips and the remaining 1/4 cup peanut butter. Using a microwave, heat in 30-second increments, stirring after each time until chocolate is melted. Stir well to fully combine chocolate and peanut butter.

Putting it All Together

STEP FOUR: Over the chilled filling, spread the melted chocolate mixture in an even layer. Refrigerate for at least 1 hour, until set.

To Serve

STEP FIVE: Remove from refrigerator and allow to stand 5-10 minutes. Use a sharp knife to cut into desired serving-size pieces.

STEP SIX: Serve chilled. Any leftovers should be stored, covered, in the refrigerator.
