Cheesy Cauliflower Soup ~

This tasty soup, served along with biscuits on the side for dipping, was our dinner last night. And as I’m sitting here now watching rain pour down outside my window, I’m wishing I had made a double batch.
This cheesy cauliflower soup is perfect for cool or rainy days like this and has been a favorite of my daughter’s for years. I hope you enjoy this quick and easy soup as much as we do!
Ingredients for Cheesy Cauliflower Soup
- 6 cups cauliflower florets, cut into bite-size pieces
- 1/2 cup carrot, grated
- 1/4 cup celery, diced
- 3 cups vegan chicken-style broth
- 3 tablespoons vegan butter
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups oat milk, or unsweetened almond milk
- 2 cups vegan cheddar cheese, shredded
Ingredient Tip:
If you like a spicy kick in your soup, try adding a dash or two of cayenne pepper sauce just before serving.
How to Make Cheesy Cauliflower Soup
STEP ONE: Into a large soup pot, combine the cauliflower, carrot, celery, and chicken-style broth. Bring just to a boil then reduce heat to low. Cover and simmer for 10 minutes, until vegetables are fork-tender. Remove from heat and set aside; do not drain.
STEP TWO: Into a large saucepan over medium heat, add the butter. When the butter is melted, whisk in the flour, salt, and pepper. Gradually add milk, whisking continuously until fully incorporated. Bring to a low boil and continue cooking for 2 minutes, until thickened.
STEP THREE: Reduce the heat to low and add the cheddar cheese. Stir continuously for 1 minute, until the cheese is melted.
STEP FOUR: Pour the cheese sauce into the pot with the cooked vegetables, stirring to fully combine. Adjust seasoning to taste and serve hot.
