I like this recipe for its simplicity and versatility. Corn with fresh basil is a practically effortless way to bring a burst of summer flavor to the table and it can be made with corn fresh off the cob or conveniently sourced from the freezer.
Use Fresh Herbs
For this recipe, the use of fresh basil is absolutely essential. Dried basil simply does not offer the same vibrant color or fresh flavor and is not recommended.
When selecting fresh basil, look for bright green leaves without any dark spots or discoloration. The leaves should be firm and not wilted or drooping and should have a strong, aromatic scent. Avoid basil with yellowing leaves or a pungent smell, as these indicate aging or poor quality.
Ingredients for Basil Corn
You will need the following:
- 2 tablespoons vegan butter
- 1 teaspoon garlic, minced
- 4 cups corn kernels, fresh or frozen, thawed
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons fresh basil, cut into ribbons and divided
How to Make Basil Corn
STEP ONE: Set a large skillet over medium heat and add the butter. When the butter is melted, add the garlic and cook for 30 seconds.
STEP TWO: Add the corn, salt, black pepper, and 1 tablespoon of basil. Continue cooking, stirring frequently for 3 minutes, until heated through.
STEP THREE: Adjust seasoning to taste, sprinkle with remaining 1 tablespoon of basil, and serve.
