Apple Walnut Bars ~
Apples and walnuts are layered over a buttery crust then sprinkled with cinnamon sugar and baked for a deliciously easy fall dessert or afternoon snack!
Apple season is here!
Whether you enjoy picking your own apples at a local orchard or the convenience of the supermarket produce department, there is no denying that fall is the perfect time of year to get your apple fix on!
These bars are quick and simple to make with common pantry ingredients you likely already have on hand.
Ingredients for Apple Walnut Bars
You will need:
- vegan egg replacer, equivalent of 1 egg
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/4 teaspoon ground cinnamon, divided
- 1/2 cup light brown sugar, packed
- 1/2 cup + 1 tablespoon granulated sugar, divided
- 1/4 cup vegan butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup apple, peeled and small diced
- 1/2 cup walnuts, chopped
Ingredient Notes
- For the vegan egg replacer, I used powder-based Bob’s Red Mill Egg Replacer.
- For the apples, Granny Smiths are my go-to for baking. Fuji and Gala apples are also good choices because, like Granny Smiths, they hold up well and don’t get too mushy during the baking process.
How to Make Apple Walnut Bars
STEP ONE: Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper.
STEP TWO: Prepare the vegan egg replacer according to package directions. Set aside.
STEP THREE: In a small bowl, sift together the flour, baking powder, salt, and cinnamon. Set aside.
STEP FOUR: In a large bowl, stir together the brown sugar, granulated sugar, melted butter, and vanilla extract just until combined. Stir in the prepared egg replacer.
STEP FIVE: Add the apples and walnuts then gradually stir in the flour mixture, just until fully incorporated.
STEP SIX: Into the prepared baking pan, press the bar mixture in an even layer to cover the bottom of the pan.
STEP SEVEN: Bake for 30 minutes, until bars are set and golden in color. Allow to cool completely then use the parchment paper to lift the bars out of the pan and onto a flat surface. Cut into squares and serve.

I’ve read and reread the instructions and was going to make them tomorrow but I don’t see where the apples go in the recipe. I am assuming that they go in with the wet ingredients but I don’t see where they go in the instructions. I know they have apples because I can see them in the ingredients and see them in the photo of the finished product.
I think I’ll add them with the wet ingredients and see if that works out. I know sometimes fruit is added with dry ingredients to keep them from sinking to the bottom of the dish but I don’t think that is the case here. This recipe looks AH-MAZ-ING! I am having a friend over for a little fall get together and these are just what the doctor ordered! LOL

Hi there! I’ve made the correction to Step #5, where the apples and walnuts should be added! I love this recipe, especially in the fall. My daughter and I actually just went apple picking today and came home with 30 lbs. of apples!😍 I hope you love these bars as much as we do!
