I use a tofu press, which gently applies pressure to extract excess water. The pressed block of tofu is then cut into cubes and arranged in a single layer on clean kitchen towels or paper towels to absorb any remaining surface moisture. Plan for at least 30 minutes before you start the marinade.
The thing about tofu is that it really does take on whatever flavors you give it. I like to make the marinade in the morning, add the tofu, and let everything sit in the refrigerator until dinner. The red onion and zucchini go on the skewers just before grilling.
