Watermelon Basil Salad ~
This chilled summer salad is light, refreshing, and simple to make!
Serve this quick and easy salad as a side dish with grilled veggie burgers or Fried Green Tomatoes.
The dog days of summer are upon us and the basil in our garden is growing like crazy! I’m using it in everything from soup to pesto. Most recently, I made this watermelon salad and enjoyed it as a light lunch for myself.
I like this recipe for its simplicity. You literally just toss all the ingredients together in a bowl then set the salad in the fridge to marinate for a bit and that’s it!
I also really like the way the chili powder, lemon juice, and salt counterbalance the sweetness of the watermelon.
Ingredients for Watermelon Basil Salad
You will need 5 simple ingredients:
- 4 cups watermelon, cut into 1/2-inch cubes
- 2 teaspoons lemon juice
- 1/4 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 cup fresh basil leaves, rolled and cut into thin strips
How to Make Watermelon Basil Salad
STEP ONE: In a large mixing bowl, toss the watermelon pieces with lemon juice.
STEP TWO: Combine the chili powder and salt, then sprinkle evenly over the watermelon.
STEP THREE: Add basil leaves and toss to combine.
STEP FOUR: Cover and set salad in the refrigerator to marinate for at least 30 minutes.
STEP FIVE: Serve chilled.

Can this be made in advance?
Yes! This salad can be made up to a day in advance and stored in the refriderator until you’re ready to serve.
Can I use dried basil?
Absolutely not! Don’t even think of using anything other than garden fresh basil for this recipe.
