Ingredients

  • 2 pounds Yukon Gold potatoes cubed
  • 1/2 cup butter
  • 1/4 cup milk
  • 1/4 cup whole grain Dijon mustard
  • kosher salt to taste
  • ground black pepper to taste

Instructions

  • Place the potatoes in a large pot and add enough cold water to cover by about 1 inch. Bring to a boil over high heat, then reduce to medium and cook until fork-tender, about 12 to 15 minutes. Drain and return the potatoes to the pot.
  • Add the butter, milk, mustard, salt, and pepper. Mash to your desired consistency, adjust seasoning to taste, and serve hot.
