- 2 pounds Yukon Gold potatoes cubed
- 1/2 cup butter
- 1/4 cup oat milk
- 1/4 cup whole grain Dijon mustard
- salt and pepper to taste
Place cubed potatoes in a large pot and add enough water to cover by about 1 inch.
Bring to a boil over high heat, then reduce to medium and cook until fork-tender, about 12–15 minutes. Drain and return the potatoes to the pot.
Add butter, milk, mustard, salt, and pepper, and mash to your desired consistency. Adjust seasoning to taste and serve hot.
