Ingredients

  • 2 pounds Yukon Gold potatoes cubed
  • 1/2 cup butter
  • 1/4 cup oat milk
  • 1/4 cup whole grain Dijon mustard
  • salt and pepper to taste

Instructions

  • Place cubed potatoes in a large pot and add enough water to cover by about 1 inch.
  • Bring to a boil over high heat, then reduce to medium and cook until fork-tender, about 12–15 minutes. Drain and return the potatoes to the pot.
  • Add butter, milk, mustard, salt, and pepper, and mash to your desired consistency. Adjust seasoning to taste and serve hot.
