Ingredients

  • 6 ounces falafel mix by weight
  • water Use amount specified on package instructions.
  • 8 ounces plain hummus
  • 1/2 cup cucumber seeded and chopped
  • 1/4 cup tomato seeded and chopped
  • 1/2 cup iceberg lettuce shredded
  • 1/2 cup kalamata olives seeded and chopped
  • 1/4 cup Mediterranean Herb feta cheese crumbled

Instructions

  • Preheat the oven to 350°F.
  • Stir the falafel mix with water as directed on the package. Let the mixture rest for 10 minutes so it firms up, then press into a 10-inch springform pan. Bake at 350°F for 15 minutes. Let the falafel layer cool for about 15 minutes.
  • Leaving the pan in place, layer on hummus, cucumber, tomato, lettuce, olives, and crumbled feta. Remove the springform ring, slice like a pizza, and serve warm or at room temperature.
