Ingredients

  • Cooking spray
  • 1 1/2 pounds sweet potatoes
  • 1 cup orange juice
  • 1/4 cup butter melted
  • 1/4 cup maple syrup
  • 1/2 teaspoon salt
  • 1/4 cup light brown sugar
  • 1/4 cup pecans chopped
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat the oven to 350°F. Coat a 9x13-inch baking dish with cooking spray.
  • Peel and slice the sweet potatoes into rounds approximately 1/8-inch in thickness. Into the prepared baking dish, neatly arrange the sweet potato rounds in overlapping layers. Set aside.
  • Into a small mixing bowl, add the orange juice, melted butter, and salt. Stir to combine then pour evenly over the sweet potatoes.
  • Cover and bake for 30 minutes.
  • While the sweet potatoes are baking: In a small bowl, combine the brown sugar, chopped pecans, and cinnamon.
  • After 30 minutes of baking, carefully remove the sweet potatoes from the oven. Remove the foil, then sprinkle the pecan/sugar mixture over the top of the sweet potatoes.
  • Return the sweet potatoes to the oven then continue to bake, uncovered, for an additional 30 minutes, until the potatoes are cooked through then serve hot.
