Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup yellow onion finely diced
  • 2 tablespoons green bell pepper finely diced
  • 2 tablespoons red bell pepper finely diced
  • 1 teaspoon jalapeno pepper finely diced
  • 2 teaspoons garlic minced
  • 2 teaspoons Cajun seasoning or to taste
  • 8 ounces cream cheese softened
  • 2 tablespoon fresh parsley chopped
  • 12 whole cremini mushrooms stems and gills removed

Instructions

  • Preheat oven to 350°F.
  • In a skillet over medium-high heat, add olive oil. When hot, add the onion, green pepper, red pepper, and jalapeño. Cook, stirring often, for 3–4 minutes until softened.
  • Stir in garlic and Cajun seasoning. Cook 1–2 minutes more, then remove from heat.
  • Add cream cheese and parsley. Stir until the mixture is smooth and evenly blended.
  • Spoon the filling into mushroom caps, pressing lightly to fill. Arrange them on a baking sheet and bake for 12–15 minutes, until the mushrooms are tender and the tops are lightly browned. Serve warm.
