4large Granny Smith applespeeled, cored, and thinly sliced
3tablespoonsvegan buttersoftened
2tablespoonsall-purpose flour
1tablespoonlemon juice
3tablespoonsoat milk or othe mild-flavored plant milk such asunsweetened almond milk
1/2teaspoonvanilla bean paste
1/4cuplight brown sugar
1/2teaspoonground cinnamon
1/8teaspoonsea salt
Instructions
Preheat oven to 375 degrees F.
For the streusel topping:
Into a medium-size mixing bowl, add all topping ingredients. Using a pastry blender, fork, or your very clean hands, combine until mixture is crumbly. Refrigerate while you prep the filling.
For the filling:
Into a large mixing bowl, combine vegan butter and all-purpose flour until well blended.
Add lemon juice, milk, vanilla bean paste, light brown sugar, ground cinnamon, and salt. Stir to combine.
To the mixture, add the thinly sliced apples. Toss to coat completely.
Putting it all together:
Into a prepared 8x8-inch baking dish, add coated apples in an even layer.
Sprinkle crumb topping in an even layer over the apples.
Bake, uncovered, for 30 minutes, or until golden brown and bubbly.
