This easy sheet pan gnocchi is crisp on the outside and soft on the inside with a satisfyingly chewy bite! Serves 2 as a main dish and 4 as a side dish.

Ingredients

  • 16 ounces potato gnocchi
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  • Preheat the oven to 400°F.
  • In a medium bowl, toss gnocchi with olive oil, salt, and black pepper. Arrange the gnocchi in an even layer on a roasting sheet pan.
  • Roast for 25 minutes, until lightly golden and crisp, stirring halfway through the cooking time.
  • Adjust seasoning taste and serve hot.
