Ingredients

  • 1 cup green bell pepper chopped
  • 1 cup red bell pepper chopped
  • 1 cup yellow bell pepper chopped
  • 1 cup cucumber seeded and chopped
  • 1 cup whole black olives drained
  • 1 tablespoon Italian dressing
  • 1/2 cup vegan feta cheese crumbled
  • 1 tablespoon parsley chopped

Instructions

  • In a large bowl, combine the bell peppers, cucumber, and black olives. Add the Italian dressing and toss to coat.
  • Sprinkle with feta cheese and parsley. Toss gently to distribute throughout the salad and serve.
