- 1 cup green bell pepper chopped
- 1 cup red bell pepper chopped
- 1 cup yellow bell pepper chopped
- 1 cup cucumber seeded and chopped
- 1 cup whole black olives drained
- 1 tablespoon Italian dressing
- 1/2 cup vegan feta cheese crumbled
- 1 tablespoon parsley chopped
In a large bowl, combine the bell peppers, cucumber, and black olives. Add the Italian dressing and toss to coat.
Sprinkle with feta cheese and parsley. Toss gently to distribute throughout the salad and serve.
