Ingredients

Ingredients for Apple Crisp:

  • For the streusel topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup light brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/3 cup vegan butter

For the filling:

  • 4 large Granny Smith apples peeled, cored, and thinly sliced
  • 3 tablespoons vegan butter softened
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 3 tablespoons oat milk or othe mild-flavored plant milk such asunsweetened almond milk
  • 1/2 teaspoon vanilla bean paste
  • 1/4 cup light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon sea salt

Instructions

  • Preheat oven to 375 degrees F.

For the streusel topping:

  • Into a medium-size mixing bowl, add all topping ingredients. Using a pastry blender, fork, or your very clean hands, combine until mixture is crumbly. Refrigerate while you prep the filling.

For the filling:

  • Into a large mixing bowl, combine vegan butter and all-purpose flour until well blended.
  • Add lemon juice, milk, vanilla bean paste, light brown sugar, ground cinnamon, and salt. Stir to combine.
  • To the mixture, add the thinly sliced apples. Toss to coat completely.

Putting it all together:

  • Into a prepared 8x8-inch baking dish, add coated apples in an even layer.
  • Sprinkle crumb topping in an even layer over the apples.
  • Bake, uncovered, for 30 minutes, or until golden brown and bubbly.
  • Allow to cool for at least 10 minutes.
  • Serve hot.
