Ingredients

  • 1 pound dried brown lentils rinsed
  • 1 14.5-ounce can petite diced tomatoes, undrained
  • 1 cup yellow onion chopped
  • 1 cup carrots sliced
  • 1 cup celery chopped
  • 1 tablespoon garlic minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme leaves
  • ½ teaspoon ground black pepper
  • ½ teaspoon kosher salt or to taste
  • 2 bay leaves
  • 8 cups chicken-style broth

Instructions

  • Add all ingredients to a 6-quart slow cooker and stir well.
  • Cover and cook on Low for 7 hours or High for 3 hours, until the lentils and vegetables are tender.
  • Remove bay leaves. Adjust seasoning to taste and serve hot.
