- 1 pound okra fresh or frozen
- 2 tablespoons vegetable oil or olive oil
- 1 pound okra fresh or frozen
- 1/4 cup yellow onion thinly sliced
- 1/2 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
If using fresh whole okra, slice the pods into 1-inch pieces. If using frozen okra, use it straight from the freezer (no need to defrost).
Heat a large skillet (a cast iron skillet works great!)over medium-high heat, then add the vegetable oil. When the oil is hot, add the cut okra in a single layer. Add the onion and sprinkle with Cajun seasoning, salt, and black pepper.
Cook, stirring frequently for 10 minutes, or until the okra is lightly browned in places. Adjust seasoning to taste. Transfer to a plate lined with paper towels to absorb any excess oil, if needed, and serve hot.
