Preheat air fryer to 400 degrees F.
Arrange three small-size mixing bowls in a row. To the first bowl, add the flour. To the second bowl, add the unsweetened almond milk. In the third bowl, combine Panko bread crumbs and vegan Parmesan cheese.
Working with a few olives at a time, coat them first in flour, then in almond milk, and finally in the bread crumb mixture.
Into the preheated air fryer basket, arrange battered olives in an even layer. You may need to work in batches, depending on the size of your air fryer.
Lightly spray the tops of the olives with non-stick cooking spray.
Cook for 6 minutes, shaking the basket to roll the olives around halfway through the cooking time.
Serve warm or room temperature.
