Ingredients

  • 1/3 cup all-purpose flour
  • 1/4 cup unsweetened almond milk
  • 1/2 cup Italian-style Panko bread crumbs
  • 1/4 cup vegan Parmesan cheese finely grated and chopped
  • 1 6-ounce jar pimento-stuffed green olives, drained
  • non-stick cooking spray

Instructions

  • Preheat air fryer to 400 degrees F.
  • Arrange three small-size mixing bowls in a row. To the first bowl, add the flour. To the second bowl, add the unsweetened almond milk. In the third bowl, combine Panko bread crumbs and vegan Parmesan cheese.
  • Working with a few olives at a time, coat them first in flour, then in almond milk, and finally in the bread crumb mixture.
  • Into the preheated air fryer basket, arrange battered olives in an even layer. You may need to work in batches, depending on the size of your air fryer.
  • Lightly spray the tops of the olives with non-stick cooking spray.
  • Cook for 6 minutes, shaking the basket to roll the olives around halfway through the cooking time.
  • Serve warm or room temperature.
