Ingredients

For the Meatloaf:

  • 24 ounces vegan ground beef
  • 1/4 cup yellow onion finely diced
  • 1/4 cup Panko breadcrumbs
  • 1 tablespoon yellow mustard
  • 1 tablespoon vegan Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup vegan cheddar cheese shredded

For the Meatloaf Glaze:

  • 1/4 cup ketchup
  • 1 1/2 teaspoons light brown sugar
  • 1 teaspoon yellow mustard
  • 1 1/2 teaspoons vegan Worcestershire sauce

Instructions

  • Preheat the oven to 350°F. Line an 8x8-inch metal loaf pan with parchment paper, leaving an overhang for easy removal.
  • In a large bowl, combine the vegan ground beef, diced onion, Panko breadcrumbs, yellow mustard, vegan Worcestershire sauce, black pepper, and cheddar cheese until well blended.
  • Press the meatloaf mixture into the prepared pan. Bake for 45 minutes or until the internal temperature reaches 160°F.
  • While the meatloaf is baking, in a small bowl, whisk together the ketchup, brown sugar, yellow mustard, and vegan Worcestershire sauce in a small bowl.
  • After 45 minutes, remove the loaf from the oven and spread the glaze evenly over the top. Return to the oven for another 10 minutes to set the glaze.
  • Let the meatloaf stand for at least 10 minutes. Then, lift it from the pan using the parchment paper, slice, and serve warm.
