Cilantro Lime Cabbage Slaw Recipe

Thinly sliced green cabbage, scallions, and fresh cilantro tossed in a bright lime vinaigrette and finished with lime zest. Serve as a taco topping or as a side salad.

Ingredients

  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • 6 cups green cabbage thinly sliced
  • ¼ cup scallions thinly sliced
  • ¾ cup cilantro chopped
  • 1 teaspoon lime zest

Instructions

  • In a small bowl, whisk together the lime juice, olive oil, and kosher salt until well combined. Set aside.
  • Add the cabbage, scallions, and cilantro to a large mixing bowl. Toss to combine.
  • Pour the dressing over the cabbage mixture and toss until the vegetables are evenly coated.
  • Let the slaw stand for 15 minutes. Sprinkle with lime zest, adjust seasoning to taste, and serve.
