Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup yellow onion chopped
  • 1 teaspoon garlic minced
  • 3 15-ounces each cans black beans, drained and rinsed
  • 1 15-ounce can petite diced tomatoes, undrained
  • 1 15-ounce can crushed tomatoes
  • 1 cup vegan beef-style broth or vegetable broth
  • 1 tablespoon vegan Worcestershire sauce
  • 1 tablespoon light brown sugar
  • 1 tablespoon chili powder
  • 1 bay leaf
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Set a large pot over medium-high heat and add the olive oil. Once hot, add the onions and cook for 2 minutes until softened.
  • Add the minced garlic and continue cooking for an additional 30 seconds, releasing its aromatic flavors.
  • Add the black beans, diced tomatoes with their liquid, crushed tomatoes, and vegan beef-style or vegetable broth. Stir well to combine.
  • Add the Worcestershire sauce, brown sugar, chili powder, bay leaf, basil, oregano, thyme, salt, and black pepper. Stir thoroughly to distribute the seasonings evenly throughout the chili.
  • Bring the mixture to a boil, then reduce the heat to low. Simmer for 15 minutes until heated through, allowing the flavors to meld together.
  • Adjust the seasoning to taste and serve hot.
