Ingredients

  • 1 pound okra fresh or frozen
  • 2 tablespoons vegetable oil or olive oil
  • 1 pound okra fresh or frozen
  • ​1/4 cup yellow onion thinly sliced
  • 1/2 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  • If using fresh whole okra, slice the pods into 1-inch pieces. If using frozen okra, use it straight from the freezer (no need to defrost).
  • Heat a large skillet (a cast iron skillet works great!)over medium-high heat, then add the vegetable oil. When the oil is hot, add the cut okra in a single layer. Sprinkle okra with Cajun seasoning, salt, and black pepper.
  • Cook, stirring frequently for 10 minutes, or until the okra is lightly browned in places. Adjust seasoning to taste. Transfer to a plate lined with paper towels to absorb any excess oil, if needed, and serve hot.
