Ingredients

  • Non-stick cooking spray
  • 2 tablespoons + 2 teaspoons garlic minced
  • 2 tablespoons vegan butter melted
  • 1 tablespoon olive oil
  • 1/3 cup vegan Parmesan cheese grated
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 6 cups cauliflower florets
  • 1 cup Panko breadcrumbs
  • 1 tablespoon Italian parsley chopped

Instructions

  • Preheat oven to 400°F and spray an 8x8-inch casserole dish with non-stick cooking spray
  • In a large bowl, combine the garlic, butter, olive oil, Parmesan cheese, salt, and pepper. Adjust seasoning to taste then add the cauliflower and toss to coat.
  • Transfer to the casserole dish, cover, and bake for 25 minutes, until the cauliflower is fork-tender.
  • Uncover and sprinkle with Panko breadcrumbs. Return to the oven then switch oven setting to Broil for 3-5 minutes, until the cauliflower is golden brown on top.
  • Sprinkle with parsley and serve warm.
