- Non-stick cooking spray
- 2 tablespoons + 2 teaspoons garlic minced
- 2 tablespoons vegan butter melted
- 1 tablespoon olive oil
- 1/3 cup vegan Parmesan cheese grated
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 6 cups cauliflower florets
- 1 cup Panko breadcrumbs
- 1 tablespoon Italian parsley chopped
Preheat oven to 400°F and spray an 8x8-inch casserole dish with non-stick cooking spray
In a large bowl, combine the garlic, butter, olive oil, Parmesan cheese, salt, and pepper. Adjust seasoning to taste then add the cauliflower and toss to coat.
Transfer to the casserole dish, cover, and bake for 25 minutes, until the cauliflower is fork-tender.
Uncover and sprinkle with Panko breadcrumbs. Return to the oven then switch oven setting to Broil for 3-5 minutes, until the cauliflower is golden brown on top.
Sprinkle with parsley and serve warm.
