Ingredients

  • 1 pound fresh okra pods trimmed and halved or quartered
  • 1 tablespoon olive oil
  • 2 teaspoons Creole seasoning

Instructions

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • In a large bowl, combine the okra and olive oil; toss to coat. Add the Creole seasoning and toss to coat again.
  • Transfer the okra to the prepared baking sheet, arranging the pods in a single layer.
  • Roast for 30 minutes, until lightly browned, and serve hot.
