Ingredients

  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cumin
  • 1 15-ounce can black beans, rinsed and drained
  • 2 large avocados pitted and cubed
  • 1/2 cup red bell pepper chopped
  • 1/4 cup scallions chopped
  • 2 tablespoons cilantro chopped

Instructions

  • In a small bowl, whisk together the lime juice, olive oil, salt, and cumin. Set aside.
  • In a medium bowl, combine the avocado, black beans, red bell pepper, scallions, and cilantro. Drizzle with the dressing and toss gently to coat. Adjust seasoning to taste and serve or refrigerate for 1 hour to chill. Serve cold.
