Ingredients

  • 1.5 pounds baby red potatoes cut into 1-inch wedges
  • 1 tablespoon olive oil
  • 1 tablespoon parsley finely chopped
  • 2 teaspoons garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt

Instructions

  • Preheat the oven to 400 degrees F. Line a baking sheet with foil or a silicone baking mat.
  • Place cut potatoes into a large bowl; set aside.
  • In a small bowl, whisk together the olive oil, garlic, Italian seasoning, and salt. Pour entire mixture over the potatoes, tossing to coat completely.
  • Onto the prepared baking sheet, spread the potatoes in a single layer. Bake for 20 minutes, or until fork tender, then serve hot.
