Preheat the oven to 400°F.
In a small bowl, combine the cornstarch, salt, garlic powder, and black pepper. Set aside.
Into a large mixing bowl, add the tofu and drizzle with olive oil. Using your hands, gently turn the tofu over in the bowl to coat with olive oil.
Sprinkle the tofu with the seasoned cornstarch mixture. Again, gently toss to coat all the pieces of tofu.
Onto a parchment-lined roasting pan, arrange the coated tofu in an even layer. Allow some space between each piece so that they are not touching.
Bake for 20 minutes.
Using a spatula or tongs, turn the tofu over halfway.
Continue baking for an additional 20 minutes, or until the tofu reaches your desired level of crispiness then serve hot.
