Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large overripe bananas
  • 1 1/4 cup vegan chocolate chips divided
  • 6 tablespoons vegetable oil
  • 1/3 cup vegan sour cream
  • 1 tablespoon lemon juice
  • 2 teaspoons vanilla extract

Instructions

  • Preheat oven to 350 degrees F. Line a 9x5-inch metal loaf pan with parchment paper so the edges hang over the pan.
  • In a medium bowl, whisk together the dry ingredients - flour, sugar, baking soda, and salt. Set aside.
  • In a large mixing bowl, use a fork to mash the bananas. Add the wet ingredients - vegetable oil, sour cream, lemon juice, and vanilla extract and stir to combine.
  • Add the flour mixture 1/2 cup at a time, stirring to incorporate after each addition. Add 1 cup of chocolate chips, stirring just until distributed throughout the banana bread batter.
  • Transfer the batter to the prepared loaf pan and use a spatula to smooth the top. Sprinkle with the remaining 1/4 cup chocolate chips.
  • Bake for 1 hour. After removing from the oven, allow the bread to stand in the loaf pan for 10 minutes, then use the edges of the parchment paper to carefully lift the bread from the pan and transfer it to a wire rack to cool completely. For best results, serve at room temperature.
