Ingredients

  • Flour-based cooking spray
  • 1 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 teaspoon + 1/4 teaspoon ground nutmeg divided
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon or apple pie spice
  • 1/8 teaspoon salt
  • 3/4 cup unsweetened applesauce
  • 1/2 cup + 2 teaspoons light brown sugar divided
  • 1/2 cup vegetable oil
  • 1/4 cup maple syrup
  • 1/4 teaspoon apple cider vinegar
  • 3/4 cup Granny Smith apple peeled and small diced
  • 1 tablespoon turbinado sugar

Instructions

  • Preheat the oven to 325°F. Spray an 8x4-inch loaf pan with flour-based cooking spray.
  • In a large bowl, whisk together the all-purpose flour, whole wheat flour, 1 teaspoon nutmeg, baking soda, cinnamon, and salt. Set aside.
  • In a medium bowl, whisk together the applesauce, 1/2 cup brown sugar, vegetable oil, maple syrup, and apple cider vinegar. Pour the applesauce mixture into the flour mixture and stir until well combined.
  • In one of the mixing bowls, toss the apple pieces with the remaining 2 teaspoons of brown sugar and the remaining 1/4 teaspoon of nutmeg. Stir into the batter.
  • Pour the batter into the prepared loaf pan and sprinkle the turbinado sugar evenly over the top of the bread.
  • Bake for 1 hour, or until the top and edges are golden brown and a toothpick inserted into the center of the bread comes out clean.
  • Cool completely in the baking pan on a wire rack. Cut into individual slices and serve at room temperature.
