Ingredients

  • 2 cups broccoli florets finely chopped
  • 3/4 cups vegan cheddar cheese grated
  • 1 cup Panko breadcrumbs
  • 2 tablespoons red onion finely chopped
  • 1 teaspoon garlic minced
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  • In a medium bowl, combine the broccoli, cheese, breadcrumbs, red onion, garlic, salt, and ground black pepper. Adjust seasoning to taste. Using your hands, shape heaping tablespoons of the broccoli mixture into 1-inch balls; you will have about 16. Set the balls onto the prepared baking sheet.
  • Bake for 25 minutes, until slightly crisp and golden. Serve warm or at room temperature.
