Ingredients

  • Non-stick cooking spray
  • 8 cups small broccoli florets
  • 3 tablespoons vegan butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cup oat milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon ground nutmeg
  • 1 cup vegan cheddar cheese shredded
  • 1/2 cup Panko bread crumbs
  • 1 tablespoon vegan butter melted

Instructions

  • Preheat the oven to 450°F. Spray an 8x8-inch baking dish with non-stick cooking spray. Arrange broccoli florets in the baking dish and set aside.
  • Into a medium saucepan over medium heat, add the 3 tablespoons of butter. When the butter is melted, whisk in the flour until smooth; the mixture will be thick. Whisk in the milk, salt, onion powder, pepper, and nutmeg. Bring just to a boil, whisking continuously, then reduce the heat to low. Add the cheese and continue cooking, stirring frequently until the cheese is melted, about 3 minutes. Pour the cheese mixture evenly over the broccoli.
  • In a small bowl, combine the Panko bread crumbs with 1 tablespoon of melted butter. Sprinkle over the cheesy broccoli to cover completely.
  • Bake, covered, for 15 minutes. Remove the cover and continue baking for an additional 5 minutes, until the bread crumbs are lightly toasted. Serve hot.
