Ingredients

  • 2 15-ounce cans chickpeas, rinsed and drained
  • 2 teaspoons olive oil
  • 3/4 cup water
  • 2 tablespoons + 1 teaspoon taco seasoning
  • 12 corn taco shells

Instructions

  • Using a food processor or potato masher, puree or mash chickpeas to desired consistency. Set aside.
  • In a large skillet, heat oil over medium-high heat. Add the smashed chickpeas, water, and taco seasoning, stirring to evenly distribute the seasoning.
  • Cook, stirring frequently, for 5-7 minutes, until heated through.
  • Spoon into taco shells, add your favorite toppings, and serve hot.
