Ingredients

  • 6 cups cucumbers sliced into 1/4" rounds
  • 1 cup red onion thinly sliced
  • 2 teaspoons garlic minced
  • 1 1/3 cup granulated sugar
  • 1 cup white vinegar
  • 2 tablespoons salt

Instructions

  • Into a glass jar with a lid, layer the sliced cucumbers, onion, and garlic. Pack them in as tightly as possible, leaving a little space at the top of the jar. Set aside.
  • In a separate container, mix together the sugar, vinegar, and salt. Stir until the sugar is mostly dissolved.
  • Carefully pour the vinegar solution into the container with the cucumbers, filling to the top. Cover tightly and refrigerate for at least 2 days.
