- 6 cups cucumbers sliced into 1/4" rounds
- 1 cup red onion thinly sliced
- 2 teaspoons garlic minced
- 1 1/3 cup granulated sugar
- 1 cup white vinegar
- 2 tablespoons salt
Into a glass jar with a lid, layer the sliced cucumbers, onion, and garlic. Pack them in as tightly as possible, leaving a little space at the top of the jar. Set aside.
In a separate container, mix together the sugar, vinegar, and salt. Stir until the sugar is mostly dissolved.
Carefully pour the vinegar solution into the container with the cucumbers, filling to the top. Cover tightly and refrigerate for at least 2 days.
