Easy Vegan Dinner Rolls

Ingredients

  • 2 cups all-purpose flour divided
  • 2.25 ounces 'Rapid-Rise' active dry yeast
  • 2 tablespoons white sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened almond milk
  • 1/4 cup water
  • 2 tablespoons vegan butter

Instructions

  • Preheat oven to 375 degrees F.
  • Into a large mixing bowl, add 3/4 cup all-purpose flour, active dry yeast, white sugar, and salt. Stir to combine the dry ingredients.
  • Into a small saucepan over low heat, add unsweetened almond milk, water, and vegan butter. Simmer just long enough to melt butter and heat through.
  • Into the mixing bowl with the flour mixture, add the milk and butter mixture.
  • Using an electric mixer, beat for 2 minutes on medium speed.
  • Add 1/4 cup all-purpose flour. Continue mixing for 2 more minutes on medium speed.
  • If using a stand mixer: Remove beater attachment from the mixer and replace it with a dough hook attachment.
  • Add the remaining 1 cup of flour.
  • If using a stand mixer, knead the dough for 5 minutes on low speed.
  • If you are working by hand, then knead the dough for about 10 minutes.
  • Using either method, continue until the consistency of the dough is smooth and elastic.
  • Cover and allow the dough to rest for 10 minutes.
  • Divide the dough into 12 equal size balls.
  • Arrange the balled dough in an 8"x8" baking dish.
  • Cover the dough again and allow it to rise for 30 minutes.
  • Remove cover then bake in a preheated oven for 20 minutes.
  • When rolls are finished baking, brush immediately with additional butter. Add seasonings and spices, if desired.
  • Serve warm.
