Ingredients

  • 2 teaspoons olive oil
  • 1 cup long-grain white rice
  • 2 cups vegan chicken-style broth
  • 1/2 teaspoon sea salt
  • 1/4 cup scallions thinly sliced
  • zest of 1 lemon

Instructions

  • Into a medium-size saucepan over medium heat, add olive oil. When the oil is hot, add the rice. Stir frequently for 1 minute.
  • Add chicken-style broth and sea salt.
  • Bring to a boil then reduce heat to low. Cover and simmer for 17 minutes, until rice is cooked and liquid is absorbed.
  • Fluff rice with a fork then gently stir in scallions and lemon zest.
  • Serve hot.
